About Us

My name is Joseph.  I'm a Chocolatier and Pastry Chef.  I started my career back in 1989 learning from my grandmother.  I have worked at many different places throughout my chosen profession.  The Banff Springs hotel, the Prince of Wales hotel in Waterton, the Delta Bessborough in Saskatoon to name a few.
I cannot take credit for most of my recipes (other than a few changes for modern ingredients) as most of my recipes have been in my family for generations.  I got them from my grandmother (a war bride from England) and she got them from her grandmother who just happened to be a pastry chef for the royal family.  Some are old enough to not even have temperature, they just says it is done when you see the puff of smoke.
